Gabinari Jerkhouse started with a simple mission: to serve the most authentic, mouth-watering jerk chicken and pork in Montego Bay. We don’t cut corners. We use real pimento wood, slow-smoke our meats, and marinate everything in our secret family recipe for 48 hours.

The Art of Jerk
Jerk is more than a flavor; it’s a cooking technique born from necessity and perfected over generations in Jamaica.
The Wood
Authentic jerk requires pimento wood (allspice). The smoke from this specific wood imparts a sweet, spicy flavor that cannot be replicated by charcoal or gas alone.
The Marinade
Our marinade is a fiery blend of scotch bonnet peppers, allspice berries, thyme, scallions, and ginger. We let our meats bathe in this mixture for two full days.
The Slow Cook
Patience is key. We smoke our meats low and slow over the pimento wood, allowing the fat to render and the smoke to penetrate deep into the bone.
